During the 18th and 19th centuries travelling butchers were to be found in every village where the cottagers kept a pig, largely fed from scraps, chickens and sometimes a few sheep, goats and often a cow for milk that would also produce a calf once a year. The travelling butcher carried most of his own tools with him, but the cottagers would provide the britcher used for propping up the carcass of a bullock, hog stools and benches, and gambrels, a curved bar used for stretching the carcass of a hog or calf.
