Originally made to aid scientific research and agricultural production in the 19th century these carved ivory botanical models of fruit and vegetables represented exotic, unusual and rare specimens that were once virtually unknown in western culinary and gardening traditions. Today they are readily available and easily obtainable and have become familiar as ingredients in the recipes of the Indian sub continent.
